Bûche de Noël framboises et chocolat blanc/Raspberry and white chocolate Christmas log
La génoise
- 4 Oeufs
- 120 grammes Sucre en poudre
- 1 sachet Sucre vanillé
- 120 grammes Farine
- 1 pincée Sel
La ganache
- 2 feuilles Gélatine
- 200 grammes Crème fraîche liquide entière
- 150 grammes Chocolat blanc
- 200 grammes Framboises
Le montage
6 Framboises
Préchauffer le four à 180°C.
- Ajouter le fouet.
- Mettre 4 oeufs, 120 grammes de sucre en poudre et 1 sachet de sucre vanillé dans Bob Chauffer 10 min/37°C/vitesse 4.
- Ajouter 120 grammes de farine et 1 pincée de sel dans Bob. Mélanger 1 min/vitesse 2.5 et retirer le fouet.
- Transvaser dans une plaque à génoise (40×30 cm) et mettre dans le four pendant 10 min à 180°C.
- A la sortie du four, appliquer un torchon humide sur la génoise et l'enrouler dedans.
- Réserver pendant 30 min.
- La ganache
- Ajouter 2 feuilles de gélatine dans un bol d'eau froide.
- Réserver pendant 10 min.
- Laver et sécher le bol de Bob
- Ajouter 150 grammes de crème fraîche liquide entière très froide dans Bob.
- Ajouter le fouet.
- Mélanger 3 min/vitesse 4 avec le panier de cuisson à la place du gobelet doseur sur le couvercle du bol pour éviter les projections et retirer le fouet.
- Réserver.
- Ajouter 50 grammes de crème fraîche liquide entière dans Bob et chauffer 2 min/70°C/vitesse 1.
- Ajouter la gélatine bien égouttée.
- Mélanger 10 sec/vitesse 4.
- Ajouter 150 grammes de chocolat blanc coupés en morceaux dans Bob et chauffer 2 min/50°C/vitesse 2.
- Incorporer délicatement la chantilly à cette ganache au chocolat blanc à l'aide de la spatule.
- Diviser la ganache en la plaçant à quantité égale dans 2 bols.
- Ajouter 200 grammes de framboises écrasée avec une fourchette et mélanger. dans un des 2 bols.
- Réserver au frigo pendant 30 min.
- Le montage
- Dérouler doucement la génoise refroidie et retirer sa couche brunie qui s'enlève facilement pour ne laisser que le biscuit jaune.
- Tartiner la génoise de la ganache avec les framboises.
- Enrouler la génoise.
- Recouvrir la bûche de l'autre moitié de ganache à l'aide d'une spatule et décorer à la fourchette.
- Ajouter 6 framboises sur la bûche pour décorer.
- Réserver au frigo, pendant 02 h 00 min avant de servir.

Preheat the oven to 180 ° C. - Add the whip.
- Put 4 eggs, 120 grams of caster sugar and 1 sachet of vanilla sugar in the Thermomix. Heat 10 min / 37 ° C / speed 4.
- Add 120 grams of flour and a pinch of salt in the Thermomix. Mix 1 min / 2.5 speed and remove the whisk.
- Transfer to a sponge cake tray (40 × 30 cm) and put in the oven for 10 minutes at 180 ° C.
- At the end of the oven, apply a damp cloth on the sponge cake and wrap it in it.
- Reserve for 30 min.
- The ganache
Add 2 sheets of gelatin in a bowl of cold water. - Reserve for 10 min.
- Wash and dry the Thermomix bowl.
- Add 150 grams of very cold whole liquid cream in the Thermomix.
- Add the whip.
- Mix 3 min / speed 4 with the cooking basket instead of the measuring cup on the bowl lid to avoid splashing and remove the whisk.
- Book.
- Add 50 grams of whole liquid cream in the Thermomix and heat 2 min / 70 ° C / speed 1.
- Add the well-drained gelatin.
- Mix 10 sec / speed 4.
- Add 150 grams of white chocolate cut into pieces in Thermomix and heat 2 min / 50 ° C / speed 2.
- Delicately add the whipped cream to this white chocolate ganache with the spatula.
- Divide the ganache by placing it in equal amounts in 2 bowls.
- Add 200 grams crushed raspberries with a fork and mix. in one of the 2 bowls.
- Reserve in the fridge for 30 minutes.
- Mounting
Carefully unroll the cooled Genoese and remove the browned layer which is easily removed to leave only the yellow biscuit.
Spread the sponge cake with the raspberries.
Roll up the sponge cake.
Cover the log with the other half of ganache with a spatula and garnish with a fork.
Add 6 raspberries on the log to decorate.
Keep in the fridge for 2 hours before serving.
